When Kind Roots Café owners Jonathan and Sarah Cummings started to plan their move into town this fall, they thought they’d be fully open at their new location this month. Funding and zoning, however, have slowed down their moving process. Kind Roots Café’s new location will open this summer between Taps and Lexington Coffee Roasters on North Main Street. The Cummings say the new Kind Roots Café will serve lunch and dinner and offer more local, vegan and vegetarian options.
